Pasta recipe Tomato arrabbiata - veggie or vegan and always delicious!
You need:
Tomatoes, onions, garlic, chili flakes (or chili peppers), carrots, grapeseed oil (or possibly olive oil), pepper, salt,
Pasta: our choice Spaghetti No. 7 Al Bronzo
1. Heat a pan with a little grapeseed oil (or olive oil).
2. Add the finely chopped or minced garlic and onions to the pan and let them simmer gently for about 8 to 10 minutes over medium heat.
3. Puree the softened tomatoes, stir in chili flakes (or finely chopped chili peppers) to taste, and season with salt and pepper. Add the finely sliced carrots. Then pour the mixture into the pan and simmer over medium heat. For the vegetarian version, stir in heavy cream with 15 to 30% fat (depending on your preference).
4. Add the pasta to the boiling, salted water and stir occasionally during the specified cooking time. Once the pasta has reached your preferred firmness (al dente), drain the water and reserve it. Stir 2 to 3 tablespoons of the starchy water into the sauce. Bring to a very brief boil.
Complete!
If desired, grate hard cheese such as Parmigiano or Grana Padano over the finished dish (in the veggie version).
